Polydextrose is a 100% water-soluble dietary fiber. Glucose and some sorbitol, end groups and citric acid or phosphoric acid residues are connected to the polymer by a single bond or diester bond through random condensation condensation polymers. They are obtained by melting. It is a white or almost white powder, easily soluble in water, with a solubility of 70%. Sweet and delicious, no special taste.
